Garlic 1 ½ head

Chicken 1½ lbs

Soy sauce 100 ml or 6 tbsp

Vinegar 50 ml or 3 tbsp

Sugar 2½ tbsp

Oil 1 tbsp

Crushed Black Pepper 3 tsp

Water 75 ml or 5 tbsp


  1. On a medium heat pan Saute garlic (cook until golden brown)
  2. Add chicken and put 1 tsp of black pepper. Simmer for 35 minutes (turn & poke with fork occasionally) tip: cover the pan for only 15 minutes, for the following procedure remove the cover to evaporate
  3. Add Soy sauce, Simmer for 3 minutes & add another 1 tsp of black pepper
  4. Then add vinegar, Simmer for another 2-3 minutes
  5. Remove sauce from the pan (set aside the sauce, we’re gonna use it later); While the chicken is in the pan, fry it for 2-4 minutes. (Don’t add any more oil) . Yaaaaas! We want that chicken to get a little-burnt outside. That’s my secret ♥
  6. For the sauce; Add sugar and mix well then add another 1 tsp of black pepper.
  7. turn off that stove honey! we won’t need that fire anymore!

I’m happy to share my recipe and I hope you try this delicious version of Adobo! My version of adobo is rich in flavor and that’s my preference, but you can still add water to dilute the rich flavor until you achieve your desired taste! With the thick sauce, it’s perfect for salads. You can add boiled eggs or pineapple to have a little twist. I hope you’ll get it right and don’t forget to update me.
