It’s Autumn!

Autumn is my favourite season for many reasons; Halloween, changing colours of leaves and Pumpkin Spice! Call me a basic bitch if you wish but it taste nice so get over it. So here is a recipe including another of my favourite things… alcohol.


90g Butter

100g Caster Sugar

1 Egg

½ tsp Vanilla Extract

200g Plain White Flour

½ tsp Baking Powder

Pinch of Salt

5-8 tbs of Pumpkin Spice Baileys

Alternatively you could add 2 tsp mixed spice instead of the Baileys 

65g Cocoa powder

150g White Chocolate Chips


  1. Sieve the flour, baking powder and salt into a bowl and set asode
  2. In another large bowl cream together butter and sugar until pale and all combined. Beat in the egg and vanilla extract
  3. Add the flour to the butter mix, ass the Pumpkin Spice Bailyeys or mixed spice, cocoa powder and white chocolate chips until the dough is formed.
  4. Wrap the biscuit dough in cling film and chill for at least 1 hour.
  5. Preheat the oven to 180 C fan (200, gas mark 5) and grease a baking tray. Either create balls of dough about a ping pong ball size and place on a baking tray, or roll out and cut into shapes 0.5cm deep.
  6. Bake for 8-12 minutes.
  7. Remove and transfer to a cooling wire and leave to completely cool.
  8. Enjoy with a hot chocolate, coffee or cup of tea.
