So what the heck is a Spiedini?

Spiedini, Italian for 'skewer', was commonly used for veal and beef dishes, but not for chicken. Today as we all lighten things up and became more politically correct it's all about the chicken.

These tasty little bundles pack a flavorful punch, leaving  everyone to want more. A party favorite in my family but tonight it's for dinner. You will love em!


2 lbs chicken cutlets (pounded thin)

1/2 stick butter room temp

Parsley and sage chopped

1 clove garlic minced

Bread crumbs ( I used gluten-free)

Freshly grated Parmesan cheese

Sea salt and cracked pepper

oh and about 4 or 5 skewers

2 tbsp olive oil

Place the thin chicken cutlet flat on a board, take some butter and rub on the cutlet, season with salt and pepper, sprinkle with garlic, parsley and sage, (I chop and make a mix). Then sprinkle with the bread crumb and cheese. Roll up short sided and cut into 1-1 1/2 inch piece. Place on skewers. Drizzle A small amount of  olive oil over the skewers and coat with some extra bread crumbs. Cook in the oven until golden brown.
