Another day another porridge, this time with a caffiene kick! Latte porridge + an extra shot of espresso... because sometimes we all need a little hit of caffiene to start the day. This combination of coffee and oats will leave you buzzing with energy.


1/2 cup rolled oats

1 cup almond milk

2 teaspoons instant coffee (dissolved in the smallest amount of boiling water possible)

1 teaspoon vanilla essence

1/2 banana, mashed (or other sweetner of choice)

1/2 teaspoon cinnamon

1 espresso shot (as strong as you like)


banana slices

chia seeds

chopped hazelnut

dark chocolate

frozen berries

For the porridge, heat all the ingredients apart from the espresso in a pan until creamy, stirring regularly (I soaked my oats overnight in the almond milk so the porridge cooked quicker and had a creamier texture). Transfer to a bowl and push the dark chocolate quares into the middle of the porridge, covering them over with the porridge so they melt to give a chocolate core. Add all the other toppings and at the last minute pour over the espresso shot- enjoy!
