Are you ever in your kitchen, about to make something, and suddenly realize that you don't have everything on the ingredient list? Yup, I've been there more than once. So I've prepared a list of handy dandy substitutions to refer to when you find yourself in these less than convenient predicaments.

If you don't have ___, use ___ instead. 

  • 1 cup cake flour...1 cup minus 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch...2 tablespoons all-purpose flour
  • 1 teaspoon baking powder...1/2 teaspoon cream of tartar + 1/4 teaspoon baking soda
  • 1 cup white sugar...1 cup packed brown sugar OR 2 cups sifted powder sugar
  • 1/4 cup fine bread crumbs...1/4 cup cracker crumbs OR 1/4 cup cornflake crumbs
  • 1 cup buttermilk...1 cup milk + 1-2 tablespoons lemon juice OR white vinegar (let stand for 5-10 minutes before using)
  • 2 cups tomato sauce...3/4 cup tomato paste + 1 cup water
  • 1 cup tomato juice...1/2 cup tomato sauce plus 1/2 cup water
  • 1 cup honey...1 1/4 cup sugar + 1/4 cup water
  • 1 cup margarine...1/2 cup apple sauce
  • 1 cup molasses...1 cup honey
  • 1 cup sour cream...1 cup plain yogurt
  • 8 tablespoons unsalted butter... 8 tablespoons salted butter + reduce salt in recipe by 1/4 teaspoon
  • 1 egg...1 mashed banana OR 1/4 unsweetened applesauce

Feel free to comment if I missed any helpful substitutions! As much as I would like to say that I just pulled all of this information out of my head, I'm not quite that smart. Most of these I found in our family's self-written cookbook or popsugar
