This came from a recipe I found online but I tweaked it to fit my preferences.  It's decently healthy and done pretty quickly.  It's become one of my favorite things to make over the past few weeks.  If you try it, I hope you enjoy it as much as my husband and I do!


1 tbsp. extra virgin olive oil

1 lb. ground turkey (I use the most lean kind I can find)

1 packet low sodium taco seasoning

1 bag frozen chopped onions and peppers

1 cup frozen corn

1 15oz. can of no sodium added diced tomatoes

1/4 cup enchilada sauce

1 cup shredded Mexican cheese blend

2 cups brown rice



1. In a large skillet over medium heat, heat oil.  

2. Add turkey until browned, approximately 5-8 minutes.  In another pot, boil the brown rice until tender.

3. Add taco seasoning.

4. Add frozen onion and peppers, corn, and tomatoes, stir until combined.  Cook approximately 5 minutes.

5. Mix in enchilada sauce and let simmer for about 5 minutes.

6. Once everything is completed, plate the brown rice on the bottom and place the enchilada mixture on top.  

7. Top with cheese.

8. Enjoy!
