Hella Meatball Stew from For the Love of Paleo

Life is so super awesome.  I love grassfed meatballs.  I love vegetables.  I love beef broth.  I love stew.  I made stew.  I made helllla meatball stew, fa real.  Tell ya friends.



2lbs grassfed ground beef

2 large eggs

1/2 yellow onion, minced or shredded

2 garlic cloves

1 tsp chilli powder

1 tbsp oregano

1 tsp salt

1 red pepper, deseeded and chopped

2 jalapeno peppers, deseeded and chopped

3 carrots, peeled and sliced

3 celery stalks, chopped

1 14oz can diced tomatoes, drained

4 cups beef bone broth


In a large mixing bowl combine ground beef, onion, garlic, eggs, salt, oregano and chilli powder.  Make them into meatballs.

Combine meatballs with all remaining ingredients in slow cooker and let cook on low for 6 hours.  This is the lazy man way of doing it, I usually sautée things for a few minutes before putting them in a slow cooker but it’s just one of those days.  One of those weeks.  One of those years.  I love everything.
