One of my absolute FAVORITE breakfast recipes to make is this incredible, rich oatmeal bowl. I’ve been experimenting a lot with oatmeal over the past few months and this combination that I put together is just SUPER good.

The ingredient quantities are sort of an estimation since I don’t really measure when I make breakfast, and you can adjust the quantities depending on your taste and texture/consistency preferences. So just pretend there’s an “about” before every ingredient measurement down below.

Ingredients:

1 cup of water or milk (I use non-dairy)

5 tablespoons of oats

5 dates (pitted, divided up into pieces)

1/2 tablespoon of cinnamon (more or less depending on your taste preference)

1 tablespoon of pure dark cocoa powder (or any coco powder of your choice)

1-2 tablespoon(s) of peanut butter (or any nut butter of your choice)

 

Optional topping ideas:

Chia seeds

Coconut flakes

Banana slices

Berries (fresh/dry)

Nuts & seeds

 

Instructions:

I start by putting the milk in a skillet (a pot works fine too) over medium-high heat. I then open up the dates to remove the seeds and tear up each date into about 3 pieces, and drop them all into the milk.

I then drop in my oats and I stir everything in, then I bring down the heat to medium.

I then add the cinnamon and stir that in. Then the cocoa powder and stir that in. I then turn the heat off and stir everything on the remaining heat given off the stove until I’m happy with the consistency.

PS: Turning off the stove and using the remaining heat is something I regularly do since it’s a saving strategy and is good for the environment.

Then just transfer your oatmeal into a bowl, top it with the peanut butter, and top it however you feel like. For the bowl above, I kept it simple with a sprinkle of chia seeds.

For the bowl on the left, I used shredded coconut, chia seeds, and crushed pistachios. For the bowl on the right, I used a sliced banana, dried cranberries, and chia seeds. The cranberry-peanut butter combination gave a slight PBJ effect which I absolutely LOVE.

You can top this in however way you want and get super creative! It’s a really easy and simple recipe that can make breakfast super fun, and you can even have it at any meal of the day. I sometimes have oatmeal bowls like this one for lunch. It’s definitely a great healthier alternative to satisfy a sweet tooth craving!
