So this definitely is not a healthy recipe (sometimes a bit of sugar is in order okay!).

But it's delicious & simple as a warm weather treat (Cape Town is starting to heat up, YAY).


Ice Cream of your choice (I used Homemade Vanilla Bean).


  • 100g brown sugar
  • 125g unsalted block butter
  • 1 egg
  • 1 1/2 tsp vanilla essence
  • 1/2 tsp salt
  • 225g Self Raising Flour
  • 200g chocolate (any kind!)
  • 1/2 tsp salt


  • 2 tbsp water
  • 1 heaped tbsp caster sugar
  • 300g strawberries (halved)
  • 1 tsp vanilla essence

Biscuits Method:

  1. Pre-heat the oven to 200C. Place butter and sugar in large bowl and mix well.
  2. Add the egg and vanilla essence and mix again.
  3. Sieve in the flour and salt to mix and combine well.
  4. Cut the chocolate into small chunks and add. Mix together and roll balls of mixture to about 2cm by 2cm; place on a baking tray with baking parchment on. Press the dough down to flatten cookies slightly. 
  5. Place in preheated oven for 7-10 minutes. 

Coulis Method:

  1. Bring the water and caster sugar to the boil, stirring to dissolve the sugar.
  2. Add the strawberries and vanilla (if using) and cook for 4-5 minutes, or until soft.
  3. Purée the mixture until smooth.
  4. Store in the fridge for up to 2 days. 

Sandwich Method:

Place a small tablespoon of ice cream onto one cookie. Press the other cookie onto the top to form a sandwich. Put the coulis on the side in a shot glass or pour it over the top.
