This weekend saw us off for a getaway to Blue Mountain Village in the town of Collingwood, in Canada. Getaways to our retreat here always involve sumptuous cooking, and breakfast this morning was no different. Super easy to put together, and on the healthy side, I wanted to share the recipe below, which serves 6.



  • 6pk of Buttermilk Crumpets 
  • Becel Margarine
  • 2-3 Fresh Scallions
  • Cracker Barrel Marble Cheese 
  • 6 Eggs



Preheat oven to 350  degrees. Boil eggs for about 14 minutes to obtain a medium boil. Drain hot water, add cold water and leave to cool. Take crumpets from package and set in a baking tray. Spread a thin layer of Becel margarine onto each crumpet. Peel the eggs when cool enough to hold, and slice them. Place once sliced egg on top of each crumpet. Grate marble cheese over egg. Chop up scallions and drizzle over cheese. Grate some more cheese over scallions. Pop tray in oven and leave in for 7-10 minutes. Pull tray out and plate each crumpet. Enjoy hot, with freshly-ground pepper if desired.  Bon appetite!
