For this recipe I used pork and beef combined. You can cook these on the bbq, grill or in the oven.This recipe serves 4-6 people.


2lb ground beef or pork or half and half.

1 med onion grated.

3 cloves garlic very finely chopped.

1 tbsn chopped fresh parsley

1tbsn chopped fresh coriander( cilantro)

1tsp Paprika

1tsp ground cumin

1/2 tsp salt

1/2 tsp black pepper

1/2-1tsp cayenne pepper

Combine all ingredients and chill in fridge for an hour.

Wash hands but don't dry and form meat around skewers.

Grill over BBQ turning so they cook evenly.

This is my basic recipe however I am a bit of an experimental throw it in and see cook so I love fresh herbs so use more than stated. I also add other flavourings depending on my mood.

For example if we fancy a bit of a kick I would add dried chilli.

Pork and I add sage and/or some apple which is nice.

Beef I sometimes add red onion and parmesan these are just examples for you.

So play with flavours and a small ball of mince and cook it. maybe do 3 or 4 different combinations and see what you like best.  Just remember to make a note of what you add. And main thing...TASTE AND TASTE AGAIN.
