Coconut is abundant in minerals, vitamins and antioxidants thus making it a super food. It is excellent for hair and skin.


2.5 tbsp fresh coconut finely grated

1 tbsp Coriander seeds 

2 tsp Cumin seeds

1/4th tsp fenugreek seeds

4-5 cloves

6 Whole Red chillies soaked in hot water for 15 mins

5-6 tsp garlic finely chopped

1 tsp ginger finely chopped

2-3 tbsp oil

1 medium sized onion finely chopped

2 cups of fresh coconut milk

About 2 tbsp tamarind extract

1 packet mushrooms


Take a pan and dry roast the grated coconut, cumin and coriander seeds, fenugreek seeds and cloves till aromatic. Let it cool and grind it to a paste in a blender with the soaked red chillies, ginger and garlic, and by adding a little water to make the paste smooth. 

Heat the oil in a pan. Add onions and saute till it becomes golden brown. Add the spice paste and fry until it darkens and leaves oil from the sides of the pan. Now add the coconut milk and let it simmer, continuously stirring on low heat till it thickens.

Saute the mushrooms in a pan separately. Then add to the curry just before serving.

Serve with Boiled Rice or Toasted Garlic Bread.
