Recipe from For the Love of Paleo

I'm not even exaggerating right now, I think I'm dying from a cold.

When I first moved in with my roommate, I was shocked at his eating habits.  Every time he gets a cold I tell him it wouldn't happen if he ate more vegetables.  In exchange, I started telling him I never get sick because I eat so healthy.  (Paleo Superpowers)  This is my second cold in the last 2 years and I go out of my way to hide it from him.  He knew last time but I blamed it on my 3 month-long course of antibiotics to be fair.  This time, I have no excuse but he's been sick for almost 2 weeks and definitely got me sick.  He's not following my blog so I know he won't see this... I swear, this shit is the cure.  If you have a scratchy throat, make this right now.

Tip: try to make your own broth, it will have much more nutrients than anything store bought.  I've posted a recipe here.  If you can't, make sure to buy organic and check the ingredients to make sure there's no sugar added.

Ingredients

1 whole chicken, roasted, carved and chopped

5 organic carrots, thinly sliced

1/2 sweet onion, finely chopped

2 garlic cloves

3 celery stalks, thinly sliced

3 tbsp unrefined coconut oil

8 cups chicken broth, with fat

1 tsp salt

1 tsp pepper


Instructions

In a large stock pot, melt 2 tbsp coconut oil.  Combine carrots, onion, garlic and celery in stock pot and season with salt and pepper.  Simmer covered on low for about 20 minutes or until all vegetables are mushy.

In a large frying pan, on high heat, melt 1 tbsp coconut oil and add cooked cubed chicken.  Season with salt and pepper and fry for 2-3 minutes.

Add chicken to vegetables.  Add chicken broth and bring to low simmer for 5 minutes.
