Ah yes, a lovely Thursday with a bottle of sauvignon blanc.  I do my best writing with my happy juice by my side.  I’m gonna spill some beans.  I have probably… hmm, I wanna get the number right… eighty-six thousand ideas for how I could get rich and famous. Some are reasonable.  Some.

My most recent idea was SIMPLICITY by For the Love of Paleo, which is a series of recipes that each use only five ingredients.  All would be delicious, paleo, visually appealing and filling.  The reason I’m telling you this is that I spent 45 minutes on the Instagram homepage trying to find a handle that I liked that was still available.  I ABSOLUTELY GIVE UP.  The fact that I started For the Love of Paleo before anyone else took that name is beyond me, because EVEERRYYYTHING is taken. If I don’t like my handle, I’m not doing this.  So yeah.  Someone else online can have this idea.  I don’t give a 🦉.

So this recipe is a little compliqué because I did not make the faux paleo bread.  These were purchased from my friend at Food in the Nud.  If you do not have a source for paleo breads, standby and I will be uploading a step by step on cassabe bread after this weekend.  If you do have a hookup, you’re gonna loooove this!




2 cups chicken broth

3 tbsp arrowroot starch

2 cremini mushrooms, sliced

1 tbsp whole peppercorns

1 tsp salt

1 roasted chicken

1 tsp coconut oil

Paleo Bread

Chives for garnish


In a small sauce pot, on medium heat, bring broth to a simmer.  Add salt and peppercorns and arrowroot flour and whisk until thickened. Add mushrooms and simmer on low for 15 minutes, or until mushrooms are soft.

Pull chicken meat from bones and pan fry in coconut oil and lightly salt.

Put the chicken over the bread and pour the gravy overtop.  Garnish with chives.
