I was short on my normal ingredients but my brother wanted me to make fried rice. So I used what I could find in the freezer and brought out this delicious meal. Always wanted to try out the fried rice in a pineapple and it was so good. Hope you all can try it out and give me feedback Ingredients for fried rice 1/2 cup of rice (normal rice) 2 whole pineapples 100g Minced meat 1 cooking spoon of sweet corn 1 cooking spoon of green peas 1/2 bundle of spring onion 1/3 of bell peppers (green and yellow) 5 balls of small red pepper 2 sticks of carrot 1/2 red onion 1/2 cooking spoon of sunflower oil 2 full knorrr cube 1 table spoon of turmeric 1 teaspoon of powdered ginger 1 teaspoon of thyme 1 full plantain salt Ingredients for the chapman 2 table spoon of chapman syrup (cherry flavour) 1/3 bottle of fanta 1 table spoon of lemon juice 1/2 Blended pineapple Procedure of fried rice If you are using normal rice, wash it, then place it in a pot of boiling water. Add salt and turmeric. Let the rice cook to the texture you want. Then drain out the water from the rice Chop the peppers, onion, spring onion and carrot into a small nice cube. Set aside If you are using the peas and sweet corn from the frozen packet, make sure to pour them into hot water and leave it for about 5mins. Then drain In a large frying pan, add the oil and onion. Let in fry for some mins. Then begin by frying the minced meat until the colour changes to brown Add the carrot, spring onion and peppers. Stir and add salt and knorr cubes. Then add in the rice slowly into the frying pan while you mix it well with the fried ingredients (Reduce the heat here to the lowest) After adding all the rice, add in the peas and sweetcorn. Mix well then add the ginger and thyme. Taste for enough salt Diced the plantain into cubes and fry. Add it into the fried rice when the heat is low and stir Serve in a half diced pineapple (Make sure you remove the inside of the pineapple and set aside) Note - you can dice some pineapples and add it at the end. Make sure you do not diced too much. Just a little would be fine Procedure for the chapman Blend the pineapple with a bit of water then sieve it out to get the fresh juice In a jar, add the juice, chapman syrup, fanta and lemon.
