A cross between caramel poppets and Nakd nibbles, my recent food addiction (the salted caramel flavour is so good). These bite size bubbles are healthy, but still naturally sweet an chewy enough to fell like a treat- perfect when you're craving crappy food and want a slightly healthier version to snack on!

Ingredients:

1 cup dates

1 tblspoon natural peanut butter

1 tblspoon tahini

small splash of almond milk

100g dark chocolate

In a food processor, blend the dates, PB, tahini and milk until a thick and smooth caramel forms (this will take at least a few minutes). Roll the caramel into small balls, about 1-2cm in diameter, and place in the freezer.

Melt the chocolate in a bowl over a pan of boiling water. Remove the caramel balls from the freezer and coat each in a thin layer of chocolate. Place onto a tray lined with baking paper, ensuring none of the balls are touching each other.
