Are you in need of a healthy meal idea for your 4th of July dinner?
Do you need a meat-free alternative?

Here's one!

So.  What you are going to do is get a huge sweet potato.  Poke that baby with a fork a couple times then pop it into the oven.  Bake it at 400F for an hourish.

Take it out of the oven (wearing oven mitts, obviously).  Slice that juicy sucker down the middle and let it cool for a bit.

Then, you're going to fill it with some black beans, corn, chopped onion, and cilantro if you're feeling fancy. 

OR you can fill it with baked beans (cause those are totally patriotic), some vegan cheddar cheese, green onion, and a sprinkle of brown sugar and/or barbeque sauce.

I call it a Sloppy Sweet.

Try it out if you're meat-free but you don't want to be left out of the 4th festivities.

Or, if you're not American, try it out for dinner tonight for something fun.
