Nothing beats buttery pastry, spinach and cheese. This recipe is a winner; one that is easily made on your days off and portioned for easy working day meals or lunches, or easily prepared the day before entertaining for a large number (serves 8-10 on it's own with a salad). Silverbeet also works as a replacement for the spinach, or used in combination. The trick is to drain the greens well and to not have a liquidy filling.
