SPICES-Spices or masalas are the main heroes of any dish. Most vegetables/lentils don't have their own flavour so its all about how you flavour your dish. I'm going to share with you some home made spice powders which are integral to most recipes especially vegetables and curries/gravies. Freshly ground organic spice powders do wonders to any dish. Avoid buying ready made spice powders available in the market as most of them are not pure and contain artificial colors.
I will be using these spices in most of my upcoming recipes.
One of the integral spices used in most recipes is Garam Masala. There are different kinds of Garam Masalas.
Standard Garam Masala is a blend of 8-10 spices dry roasted and ground to a fine powder. 
8 tbsp Black Cumin seeds
8 tbsp Cumin seeds 
20 bayleaves 
4 tbsp peppercorns
1 tsp powdered mace
4 tbsp ginger powder
10 Cinnamon sticks
8 tbsp Green cardamom seeds
8 tbsp Black cardamom seeds
8 tbsp cloves
Dry roast all spices except mace and ginger powder on low heat until aromatic. Let the spices cool. Now blend the roasted spices along with mace and ginger powder in an electric blender or a coffee grinder and grind to a fine powder. Now seive the powder  through a fine sieve. Store your magic masala in an airtight container.

Lasts for approximately six months to one year.
