Work weeks can become extremely hectic for me so I'm always thinking up easy, healthy and quick dinners to cook so I don't resort to frozen meals, or even just popcorn for dinner. I came up with this rice bowl to fulfill my dinner needs and thought that I would share this recipe with you. You can make it your own by adding different vegetables and lean proteins- but I can promise you the recipe below is extremely satisfying and tasty!

*Super Greens Chicken & Rice Bowl: recipe makes 1 serving; although, you can make a larger serving of each item to have for lunch or dinner on subsequent days.

-1/2 Cup Brown Rice: I use a brown rice/quinoa mixture that is from a microwaveable packet (http://www.seedsofchangefoods.com/our_foods/product.aspx?c=rth&p=285)

-3 oz. Grilled Chicken Breast (or Tofu to make the bowl vegan)

-Cooked Broccoli- as much as you would like

-1/4 Cup Roasted Brussels Sprouts

-a few slices of Avocado

-Optional: Sprinkle with Parmesan Cheese

Why is this dish healthy?

The brown rice/quinoa mixture is a whole grain that provides a source of protein, vitamins and minerals and is also a complex carbohydrate that digests more slowly, and helps you feel full longer. It is important to include a lean protein source such as grilled chicken breast, tofu or even beans to provide protein and also vitamins and minerals that are essential for building and maintaining muscle, bones, skin, blood, etc. Green leafy vegetables such as broccoli and Brussels sprouts contain antioxidants, vitamins and minerals that are low in calories and have been said to be "the number 1 food that you can regularly eat to help improve your health" (Jill Nussinow, MS,RD: http://www.webmd.com/diet/healthy-kitchen-11/leafy-greens-rated). Lastly, avocado provides a healthy source of monounsaturated fat that can help lower cholesterol and triglyceride levels.

As you can see, this rice bowl is not only tasty but a powerfully healthy lunch or dinner choice as well!
