Winter has taken her sweet time to show herself, as usual, but today is of those few rainy overcast days in Cyprus and a welcoming one at that :-)

All you want to do is snuggle up in front of the fire place, with homey, comfort food and good company.

It’s that time of the year where we reflect on the year gone by, our experiences, our hurts and our joys, what we are thankful for and what our goals for the New Year will be.

I am thankful for my family and friends, my doggies, the lovely island that is my home, the magic of nature and for all the people who share their individual gifts with the world.

So, it’s the perfect weather for warm, sweet, comforting soup.

Soup has become a staple in our household. It serves as a meal for some a starter for others and a snack between meals for most.

Now, I usually make my soups with whatever I have at home, and today it happens to be some sweet potatoes, carrots, celery, onions, leeks and ginger. I thought the ginger would balance the sweetness. Apart from the usual seasoning like sea salt and pepper, I added some warm sweet spices like cinnamon and nutmeg. You can use whatever suits your taste.

Ingredients:

4 small sweet potatoes

1 large carrot

1-2 stalks celery

1 onion

1 tsp. chopped ginger

2 tbsps. chopped leek

2-3 tbsp. Virgin olive oil

1 liter water or vegetable stock

sea salt and pepper to taste

cinnamon and nutmeg to taste

Fresh coriander for garnish

Method

Sauté onion, leeks, celery, ginger and carrots

Season with salt and pepper

Add sweet potatoes, stock and spices and bring to the boil

Lower heat and cook for 25-30 min, or until all ingredients are tender

Once cooked blend in a food processor or with a hand blender until silky smooth.

Top with some fresh coriander or parsley and enjoy.
