I like to cook, to create, to experiment.  I like to get my hands dirty, to get elbow-deep in sugar and spice.  But more than that, I like to eat.  I like to eat good food.

Back home in South Carolina, we are (attempting) to grow tomatoes, eggplant, and zucchini in our backyard.  While the tomatoes and eggplant are being stubborn and refusing to blossom, I'm convinced that someone is injecting the zucchini plant with steroids.  Those things are growing at the speed of light, and my stomach just doesn't have the capability to shovel down 6 zucchinis daily.

With all this being said, I've had to be creative and think up some zucchini recipes to keep from getting bored.  This girl needs some diversity in her life!

I've decided to share some of these recipes with y'all - breakfast, lunch, and dinner.  Yes, as strange as it sounds, you can eat zucchini for breakfast.  Read the recipes below to find out how!

 

Breakfast:

Zoats (Zucchini Oatmeal)

Ingredients:

  • 1/2 cup oatmeal (dry)
  • 1/2 medium zucchini
  • 2 tbsp brown sugar (or maple syrup)
  • 1/2 banana, sliced
  • Cinnamon

Method:

  1. Grate zucchini
  2. Wrap zucchini in a paper towel and squeeze out excess water
  3. Cook oatmeal according to directions
  4. Once almost cooked, stir in grated zucchini
  5. Stir in sugar & cinnamon, then garnish with sliced banana

Zucchini Muffins

Ingredients:

  • 2 medium zucchini, grated
  • 3 cups all-purpose gluten-free flour (or flour of choice)
  • 2 tsp baking powder
  • 3/4 cup brown sugar (or maple syrup)
  • 3 bananas, ripe and spotty
  • 1 cup almond milk
  • 1/4 cup coconut oil, melted

Method:

  1. Preheat oven to 350F and line 8 muffin tins
  2. Combine dry ingredients
  3. Grate zucchini & mash banana
  4. Combine all ingredients
  5. Spoon batter into prepared tins & bake 20-25 minutes

Lunch:

Zucchini Roll-Ups

Ingredients:

  • 1 zucchini
  • 2 tbsp hummus
  • vegan parmesan cheese
  • 2 tbsp tomato sauce

Method:

  1. Thinly slice zucchini lengthwise, using a mandarin slicer if you have one
  2. Dollop hummus on one end of the zucchini, then sprinkle with cheese
  3. Roll it up! Then drizzle tomato sauce on each roll-up (or dip the roll-up in the sauce!)

Zucchini Roll-Ups

Ingredients:

  • 3 zucchini
  • Pesto

Method:

  1. Using a spiralizer (you can find them on amazon!), spiralize your zucchini
  2. Mix with pesto (and top with sundried tomatoes, pine nuts, & lentils if you're feeling fancy!)

Dinner:

Zucchini Boats

Ingredients:

  • 4 zucchini (medium)
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 3 yukon gold potatoes, boiled
  • handful cherry tomatoes, chopped
  • 1/2 cup nutritional yeast (or vegan cheese)

Method:

  1.  Preheat oven to 375F
  2. Cut zucchinis in half lengthwise, then scoop out the insides
  3. Chop insides into cubes
  4. Sauté chopped onion in water or olive oil, until translucent
  5. Add chopped zucchini, tomatoes, and red bell pepper to sauté
  6. Mash the boiled potatoes, then add 1/4 cup nutritional yeast (or vegan cheese), onion powder, garlic powder, salt, and pepper
  7. Spoon potato mash into zucchini boats, then top with sautéed veggies
  8. Sprinkle remaining yeast/cheese on top
  9. Bake 20-30 minutes

 

Sides:

Zucchini-Potato Mash

Ingredients:

  • 2 large russet potatoes
  • 1 medium zucchini
  • 1/3 cup nutritional yeast (or vegan cheese)

Method:

  1. Peel zucchini, then cube zucchini & potatoes
  2. Boil zucchini & potatoes, reserving 1/2 cup of "potato water"
  3. Mash zucchini & potatoes, pouring in "potato water" when needed (can also use almond milk)
  4. Stir in nutritional yeast, garlic powder, onion powder, rosemary, salt, and pepper

Zips (Zucchini Chips)

Ingredients:

  • 1 medium zucchini
  • salt & pepper

Method:

  1. Preheat oven to 225F
  2. Thinly slice zucchini, then sprinkle with salt
  3. Let zucchini "sweat" for 10 minutes, then dab away excess water with a paper towel
  4.  Sprinkle with pepper (or paprika, garlic powder, chipotle powder, etc...)
  5. Bake for 2ish hours, flipping once halfway through
