Today I have a recipe to share and I hope someone tries it and let me know what you think. Anyway I usually eat my oatmeal the old fashioned way, which is cooking it on the stove. Lately I got tired of having my oatmeal the same way each and everyday and I started to get sick of it. So that’s how I knew it was time to switch things  up abit. Usually recipes are included on the backs of the oatmeal cartons so I checked it out. The recipe on this particular box was for “oat crunchies”, but me being me:-) I decided to tweak the recipe a little, mostly because I didn’t have the exact ingredients the recipe required and I wanted something with more of a cake-like texture.

So  the “oatmeal cake” ,as I call it, was born. This is what you will need.


  • 1 cup of dried coconut
  • 1.5 cup of cake flour
  • 4 cups of oatmeal (raw/uncooked)
  • 1/3 to 1/2 cup of sugar (depending on how sweet you like your baked goods. I used brown sugar)
  • 1 teaspoon of salt
  • 1 teaspoon of ground ginger powder
  • 1/2 a cup of melted margarine
  • 3 tablespoons of syrup
  • 2 teaspoons of baking powder
  • 1/2 to 1 cup of milk (or enough to make the mixture stick together)
  • 1 egg
  • 1 teaspoon of vanilla essence


  1. Heat the oven to 180 degrees celsius (use the bottom burner)
  2. Mix all the dry ingredients together.
  3. Mix the syrup and melted margarine together
  4. Stir the syrup mixture into the dry ingredients and mix well
  5. Add the egg and vanilla essence to the milk and mix well, then add to the dry ingredients as well
  6. pour the doughy mixture into a greased baking tray and spread it evenly throughout the tray.
  7. Place the tray and the rack about 2 slots from the bottom burner. Bake for 20-30 minutes until golden brown or when a butter knife comes out clean when inserted into the “cake”.
  8. Cut into squares and leave to cool before taking it out of the tray. Then enjoy with a cup of tea:-)❤❤

This is a much healthier alternative to regular cake and it tastes just as good with all the added benefits of oatmeal❤❤
