I am sure by know you are aware of how much I love zucchini, especially in dinner as an awesome pasta replacement. This time, we have zucchini pancakes! (Yum)

I semi-stumbled across this idea one morning when trying to make zucchini fritters because I was craving some sort of hash brown, fritter type of food for breakfast. I was in a mood where I couldn't really be bothered to make full on fritters and I was starving so it needed to be quick and easy. 

They probably are more like fritters than pancakes still but pancakes make them sound naughty and treat like which makes me want them even more, and a good way to pretend to your kids that you are having pancakes for breakfast. 

These zucchini pancakes take a few minutes to whip together and fry off and are super versatile that a friend of mine even makes them for dinner when she can't be bothered.

Give them a try one morning, top with whatever you have left over in the fridge or that your body is telling you it wants and enjoy them. 

Zucchini Pancakes

(This recipe makes one palm size pancake if wanting to make more for other the rest of the family increase the batter to the desired number of people)

Ingredients:

1 grated zucchini

1 egg

Salt and pepper

2 tbsp arrowroot powder

Toppings:

1/4 of avocado

2tbsp of sauerkraut

2-3 slices of smoked salmon

1 cup of spinach

Method:

In a small bowl whisk together the grated zucchini, egg, arrowroot powder and salt and pepper.
Use a small frying pan on a medium heat with a tsp of butter, pour in the batter. Once one side has gone golden brown, flip it over and fry the other side of the pancake.
Once the other side has gone a nice golden brown place on a plate and top it with all your toppings.
