Recipe: Coconut Cream Pie

Something different to make on a sunday afternoon, maybe?
This dish does take quite alot of time, especially if you make the crust from scratch.
To save time you can always just go out and buy a store bought pie casing. If you want to make the crust by yourself try looking for a sweet pie crust .

Ingredients:
1 x store bought pie casing
1 tin 250ml coconut milk
1 1/2 cup milk
4 egg yolks
1/4 cup of corn flour
1/2 cup of caster sugar
1 tsp vanilla essence

Whipped cream for the top
Toasted coconut to dress it up

Method:
1) put your coconut milk and milk into a saucepan and heat until nearly boiling
2) in a seperate bowl put your corn flour, egg yolks, sugar and vanilla mix together with a ladel of the hot milk
3) when incorporated put the bowl mix into the saucepan and whisk until it's thick
4) put the thick custard into the pie crust and wait for it to cool
5) place thickened cream ontop and sprinkle coconut
