Sandwich cake

Hey pixels!! Vegetarian sandwiches and cakes have had a child: the sandwich cake!!! It has the best from both parents: it’s healthy, fresh and yummy!! Can it be better? I doubt it…

This has been my lunch today (and a bowl of vegetable soup), and I can tell you, my happy pixels, it has been yummy. I love it. It was the first time doing this recipe, but it won’t be the last.

This is the recipe I’ve used today, but of course, you can change it and use your favourite sandwich ingredients. The result will be good.


  • 6 sandwich bread slices
  • 1 egg
  • vegan maio
  • 5-6 sticks of vegan surimi
  • 1 small can of vegan tuna (about 85g)


Boil the egg; allow it to cool.

Make the vegan maio (you’ll find the directions here.)

Using a round mold or a glass, remove the bread crust, leaving the slices on a round shape. So, they will act as round cake layers.

Cut into small pieces the surimi and the egg. Mix them in a bowl with the tuna and 1 1/2 tablespoons of vegan maio. (Leave a bit of surimi to decorate).

To assemble the cake, act as if it was a sweet one. Start with a bread layer, cover it with salad and finish with the last bread slice. (see photo below)

And now, the frosting. Use the vegan maio as if it was a sweet frosting, covering the entire cake with it. Decorate with surimi slices.

Note: feel free to change the ingredients; use your favourites.
