Have you ever been faced with the morning dilemma – choosing between eating a nutritious breakfast, or getting your morning caffeine fix?
The reality of our twenty-first century lives is that we don’t give ourselves enough time to do much of anything. Why spend the effort preparing a balanced breakfast every morning when you can cram in an extra fifteen minutes of much needed sleep instead?
While thinking of some delicious new smoothie recipes, I realized something: wouldn’t it be great if you could sip back your morning coffee, while giving your body some serious fuel, and nutrients at the same time? There’s really no better way to get your day started.
It’s important that we embrace our busy lifestyles, but that doesn’t mean that we should regularly deny our bodies something that’s delicious, and nutritious. Most people know that breakfast is the most important meal of the day, so it’s time that we make this notion a daily reality.
Coffee is a necessary part of my morning routine, but I do crave something sweet to have alongside it. I started eating a banana on my way to the subway, but choosing a smoothie is a great option for effortlessly adding other essential ingredients to the mix. Such ingredients can include: chia seeds, crunchy peanut butter, and coconut milk. The mixture of protein, B12 vitamin, and healthy fats found in these foods will keep your energy levels boosted for hours.
After experimenting with this recipe, I realized that it would be a perfect vegan ice cream as well. I blended an extra serving, and poured half of the amount into a separate glass. I covered it with plastic wrap, and left it in the freezer for about an hour. It was an absolutely delicious treat to enjoy after lunch! Most banana ice cream can be eaten right away, but because the freshly brewed coffee makes the consistency a bit runny, I do recommend allowing it to set in the freezer.

Makes: 1 large serving
Ingredients
3/4 Cup of Black Coffee
1/2 Cup of Coconut Milk
1 Teaspoon of Chia Seeds
2 Tablespoons of Crunchy Peanut Butter
1/2 Teaspoon of Vanilla Extract
1 Tablespoon of Shredded Coconut
Directions
1. Brew a fresh cup of coffee, and prepare the pieces for your high-speed blender.
6. Start your blender on low speed, and continue to turn up over 30 seconds. Continue to blend on “purée/liquify” setting for roughly one minute.
8. Pour the smoothie into a large glass. Drink right away as a creamy breakfast, or cover with plastic wrap and freeze for 1 hour for an ice cream treat.
